Seasonal ingredients from local farms bring fresh flavors to Lake Nona.

Each week, Executive Chef Jason Bergeron visits local farms in search of the freshest ingredients for Canvas Restaurant & Market.

“There are endless possibilities each season. We’re lucky to live in an area where you can grow all-year round,” said Bergeron, Executive Chef at Tavistock Restaurant Collection.

With a passion for ingredients and a life-long interest in where food comes from, Bergeron collaborates with Canvas Executive Chef George Yiu to find opportunities to incorporate locally-sourced ingredients into the Canvas menu and create ready-made family meals four days a week.

“Our focus is buying local whenever we can to provide delicious meals with healthy and fresh ingredients,” said Bergeron.

From Wednesday through Saturday, you can preorder family meals like the restaurant’s signature buttermilk fried chicken accompanied by different local vegetables each week like mushrooms from Fungi Jon, salad from Kalera, or other greens from Mick Farms.

Beyond the difference in freshness and flavor, Bergeron says buying from local farmers is beneficial for three reasons: “You know what you’re getting is in season, you’re reducing the carbon footprint, and you’re supporting local businesses.”

Buying fresh ingredients from local farms is not the only way Canvas supports local businesses. In addition to housing the Lake Nona Info Center, Canvas Market carries a collection of local goods from Rifle Paper Co., Heavens to Betsey Jams, Corkcicle, Naked Bar Soap Co. and more.

Canvas Restaurant also carries craft beer from local breweries including Crooked Can Brewing and Orlando Brewing Co.
